At Bivio our passion is authentic Neapolitan pizza. Napoli... our love of the city, its cuisine, and in particular, its pizza is where our story began. We heard time and time again “It’s all about the dough.” True to Neapolitan tradition, and the passion of the pizzaioli, we construct our pizza using “00” flour from Naples, San Marzano DOP tomatoes, extra virgin olive oil, fresh basil, fior di latte or bufala mozzarella, and sea salt. Our dough is gently mixed using a 28 year old “lieveto madre” (natural yeast culture) then with intense heat is baked in our wood burning il forno. At Bivio all of our dishes are made with the freshest and highest quality ingredients.

    This is a great restaurant. The food is delicious and prepared perfectly. The atmosphere is beautiful and relaxing. Our server, Bella, was very accommodating and friendly. Dining here is always an enjoyable experience. We highly recommend this establishment.

    We were in Monticello for one night and got a recommendation to try Ciao Bella. We’re so glad we asked a local! What an outstanding meal. I had the cavatelli with salmon, and my husband had the pork chop valdostana. Really exceptional. If we’re ever in the area again we would absolutely come back.

    Our server, Melissa, is always exceptional and attentive! We have been dining here for years. It’s one of our fave spots mostly because of service! The Host, Lisa, is a doll and one of the loveliest people.
