Su objetivo es preservar los platillos y costumbres de la región, así como los antojitos o "comida de zaguán" que otorgan identidad a la ciudad de Puebla.Uno de sus platillos estrella es el Chile en Nogada, disponible desde finales de julio hasta septiembre, el cual aprovecha ingredientes endémicos y tradicionales.
