The restaurant pays homage to our founder, Louis Fauchere, who began working as a master chef at Delmonico's in New York City in 1848. This restaurant is a tribute to the late Felix Rosado and the cantina bears his name. Felix was a Mexican immigrant who lived in Milford, Pennsylvania and opened the original La Posada Mexican Restaurant in Dingman’s Ferry in the late 1980’s. The restaurant was not just a destination for tourists visiting the Poconos; it became a favorite to locals.
