Chef Wesley E. Choplin graduated from the prestigious Culinary Institute of America in Hyde Park, New York in 1997.

Chef Wes, as he is fondly known in the industry, has been a sought after chef from his early years at the world renowned Pinehurst Golf & Country Club. He quickly became popular for his "outside the box" mentality and later being recruited by many of North Carolina's best restaurants the last 25 years, ultimately becoming the renowned Chef that he is today. His passion for being a culinary artist is truly unmatched.

With Anthony Bourdaine's mentorship at CIA, Chef Wes Choplin has surpassed and achieved many of his culinary goals and received awards for his talent and community service alongside his wife, Faith who is equally passionate about giving back and the service industry. Chef Wes, Executive Chef at Choplin's Restaurant and his wife, have built a true institute, 15 years strong in the Lake Norman area which has gained popularity in the many surrounding cities.

    Waited way too long for initial service. Took us an hour and 15 minutes to be served. The food was on the poor side of average and the prices were very high. Unfortunately it’s coming off our favorite restaurant list.

    I made a reservation for my wedding anniversary dinner last month. Three hours before my reservation they called and said they have a private party. Very disappointing.

    Choplin's in Cornelius is our favorite restaurant and "go to" establishment for special occasion dinners. Last night was no exception with an outstanding dinner and exceptional service by our server, "V," who you should definitely ask for in the future. From great cocktails, to expertly prepared food, Choplin's is the place to go. Try it. You won't be disappointed.

    Our food wasn't the greatest. However, our server Shannon was great! I ordered the filet mignon, and my husband ordered the rib eye. We also ordered the lobster. Our steak was unseasoned; the vegetables were mushy and the lobster was undercooked. We didn't trust eating the rest of lobster. The best part of the food was the lobster/spinach dip appetizer. However, the pita chips were scorched on one side.

    I recently dined at Choplin Steakhouse, and it was an exceptional experience from start to finish. I’ve been here multiple times, and Choplin never disappoints. The restaurant consistently delivers excellent food, warm service, and a welcoming atmosphere that makes every visit special. For appetizers, we ordered the Fried Brussel Sprouts with goat cheese, Indian curry butter, and pecan-smoked salt. They were perfectly crisp and packed with flavor—a great start to the meal. For the main course, we went with the Twelve-Ounce 1855 Nebraska Angus Filet Mignon, center cut, paired with scalloped potatoes. The steak was cooked to perfection, tender, and juicy, while the scalloped potatoes were creamy and decadent. We also tried the Lobster & Crab Ravioli, which came with pancetta bacon, sweet peas, and lump crab meat—rich and full of fresh seafood flavor. To finish, the Banana Foster was a delightful dessert, perfectly caramelized and indulgent. Throughout the evening, Steph, our server, made us feel comfortable and attended to our every need with politeness and care. Booking a reservation was easy, and the ambiance of the restaurant added to the overall experience, making it an ideal spot for a memorable night out. Overall, I give Choplin Steakhouse 5 out of 5 stars. It’s the perfect place for anyone looking for outstanding food, stellar service, and a cozy, upscale atmosphere.

    We came here on our anniversary last year before we actually moved here three months ago. We now have been here for our anniversary this year and would definitely come back again. The food is delicious. Our servers are always great!

    Last night we had 4 couples and had an overall nice time. Service was friendly but slow....the server told us she was also the bartender which did not seem right and the mixed drinks took a very long time, the food was delicious but also took a very long time to arrive. We were the only people in the restaurant at first so not sure why such a long wait.

    Me, my husband and good friend had a wonderful evening at Choplins. The restaurant looks amazing after a lot of time was put into renovations/updates in the past few years-a definite 5 star ambience. Our server Kelly was very good and wanted to make sure we enjoyed our night out. The appetizers were delicious (barrata with tomatoes, brussel sprouts and shrimp cocktail was superb) and we thoroughly enjoyed all of them! We also ordered filet mignon and ribeye steaks which were good. To complement the food, we enjoyed a bottle of red wine which was good but we hope they will expand their red wine menu selection to allow more options, especially cabernet. The owners (Faith and Wes Choplin) are committed to providing an excellent dining experience for its guests at Choplins. I highly recommend you try this outstanding restaurant in Cornelius for a date night, girls night out or a business dinner. Bon Appetite!

    First time there and we sat in the Wine Room. We were greeted and sat down promptly as we had reservations. Our server was detailed, suggestive and friendly. The food was immaculate and prepared perfectly. We also had some cocktails that were prepared tasteful. Perfect evening- strongly recommend this restaurant.
