Verise is a declaration of Italian romance, rooted in authenticity, shaped by seasonality, and devoted to the quiet pleasure of slowing down. Conceived by Chefs Riccardo Bilotta, the restaurant draws from the soul of Central Italy while embracing the ease of Southern California. Bilotta brings experience from two Michelin star Il Pellicano and three Michelin star El Celler de Can Roca, while Chef de Cuisine Kevin Martinez leads with clarity, technique, and peak season ingredients.

Each morning begins with pastas made in house, and the menu shifts with the market. Guests can expect moments of delight, from a tableside cheese wheel to a cocktail program built around seasonal spritzes.

Just beyond the dining room, a sun warmed olive grove evokes a quiet corner of the Italian countryside, inviting guests to linger, savor, and embrace Italian romance made real.

A few weeks ago, I had the opportunity to attend an event @verisecarlsbad. The event was called, "il convivio," and during a speech given by Renalto, he talked about how we don't sit at a table and share food and conversation with people who we don't know. We had a great time at this event, and look forward to the next one! Special thank you to @verise for inviting us, and to Joann and Renalto who were amazing hosts! They will be holding another event 10/22, so definitely RSVP for an evening of delicious food, drinks, and an evening worth lingering over!

Did you know that inside @hotelsoleacarlsbad there is a modern Italian restaurant called @verisecarlsbad? The restaurant makeover and setting are superb! Love the vibe of this local place. All the servers were very good. The food was meh, $37 spaghetti and meatballs, I can get better flavor from frozen ones from Walmart, sorry! And no fresh grated parmesan cheese at an Italian restaurant for on top of your food?! Chicken parmesan was okay, a little dry. The Margherita pizza was loved by all at our table. Hope the food improves and then we'll be back.

A bit of a mixed bag, but generally very good. We had four adults and two kids dining. Each person ordered something different. For the most part, everything was very good. My only small complaint was that my spaghetti was overcooked and mushy, but all of the other dishes were excellent. Would definitely dine there again.

Service is super slow. Our server was very nice but it’s so slow for a Sunday night and when we sit down it was literally 4-5 tables max. We got our dinner after 1 hour 20 minutes. Drinks are bland, steak not good, gnocchi okay. Cheese wheel pasta for 50$, didn’t have truffle taste at all even it says has truffle in it. It was like over cooked pasta too. I can’t believe we paid 50 plus extra protein for that pasta. Also they said they have full bar since their drink didn’t sound very good. I ordered margarita and they charge 16-17$ for their cocktails, but margarita was 27$! That was not even a good margarita. I’ve never had 27$ margarita tasting this bad. Charge was 22$ for a blanco tequila and 5$ to make it…. I didn’t even get a little buzz for this 22$ priced tequila supposed to be good quality. I go to Javier La Jolla, such a fancy restaurant in an expensive area and even their margaritas 22$ and amazing and you almost get drunk with 1. I won’t be returning again.

We loved the crudo and branzino. The wine was perfect. Our server was great. We will return but not on a weekend. Apparently parents think it’s acceptable for their kids to race around screaming and disturbing other diners.

The staff were very kind and attentive however there weren't enough to go around. After ordering breakfast we waited for 45 min only to have a different server bring out our meal because it sat in the cook station window. Food quality for dinner the night before was average. It did not meet up with the expectation we had heard from others unfortunately.

My wife and I ordered a glass of champagne with a splash of brandy and food from the starters menu. Pasta al panna was incredible; artichokes to die for, salad great, chicken parm was perfect; tiramisu light and flavorful, topped with a cappuccino. Delicious! Chef deserves Michelin recognition for ambience, service and food presentation. Young waiter was good and staff very engaging, happy and made the meal fun.

We had never been before and we loved the ambiance and the bar. The drinks were amazing! Food was good, but could do with a couple more options. Starters were amazing! Service was superb!

Had a delicious dinner with wonderful ambience and superb service from Samantha and team. The Pane Casereccio Con Prosciutto appetizer was melt in your mouth delicious! And the Lasagna and Chicken Parmigiana were scrumptious! Generous proportions. Tiramisu to finish. Loved it!

We went when they 1st opened, they seemed to have gotten the kinks out. Last night was lovely, much approved, nice vibe on a Saturday nt. Service was excellent,atmosphere,live music, food good. Will be going back,love the atmosphere & Mgr. Servers checked on us throughout dinner. Really nice they gave a dessert & complimentary glass of prosecco as we were celebrating 65th bday. Look forward to going back & trying more Italian food. They use good cheese🧀 some imported from italy I believe. Make rsvp ahead as spots were full.🌟🌟🌟🌟
