Tripe, sweetbreads, beef tendon, brains and other offal are at the heart of a simple cuisine deeply connected to Roman and Lazio traditions, alongside a selection of vegetarian dishes.Since 2023, the Osteria has been awarded a Bib Gourmand by the Michelin Guide. The offering is complemented by a carefully curated selection of wines and olive oils, as well as two tasting experiences: one entirely dedicated to tripe and the other celebrating the gastronomic tradition of the Viterbo area.The intimate, refined and discreet setting is designed to offer an authentic and elegant dining experience, away from the more tourist-oriented circuits.
