From the team behind Michelin-recommended SUYO, Chef Ricardo Valverde brings the "coastal soul" of Peru to Vancouver's historic Chinatown. UCHU is Canada's first true Peruvian cevicheria — a raw bar-driven menu of vibrant ceviches, delicate tiraditos, and Nikkei-style sushi, where Peru's coastal traditions meet the Chinese and Japanese influences that shaped both the cuisine and the neighbourhood. Standouts include the layered Bluefin Tuna & Crab Causa and the warm Scallop Batayaki, a Japanese-Italian riff on conchitas a la parmesana. The room preserves the original 158 East Pender space's exposed beams and red brick, grounding the restaurant in Chinatown's history while a design language rooted in water and movement carries Peru's coastline throughout.
