Echo Lake is a rum bar and restaurant with a patio from partners Chloe Frechette and Paul McGee. The Williamsburg destination marks the evolution of McGee's beloved Chicago bar Lost Lake, a World's 50 Best Bar and one of the most celebrated tropical bars in the country. At its core, Echo Lake is a celebration of rum in all its styles, showcased through rum-focused cocktails and a selection of house-made rhum arrangé, agricole rhum infused with fruits and spices in the tradition of the French Caribbean. Highlights from the bar include the Daily Daiquiri (always $12) and the Freezer Ti Punch, Echo Lake's take on the freezer Martini by way of Martinique. Experience a Daiquiri made with 1970s rum or a Venetian Spritz made with 1960s aperitivo liqueur.Undercurrent marks the evolution of Milk Room, McGee's beloved bar housed within the Chicago Athletic Association. Highlights from the rum collection include pre-embargo Cuban rum from 1934, a 1963 Trader Vic Mai Tai rum, and a trio of flagons distilled in the 1940s and '50s crated and earmarked for the Royal Army Service Corps.Refined Martinis, Champagne Cobblers, and other classic cocktails round out the menu, all served in an intimate 20-seat bar made for lingering beneath Echo Lake.Reservations required.
